AQL: Cozzini’s Standard of Knife Quality

Every knife that enters our sharpening centers goes through a systematic, multi-step inspection process. Nothing leaves our facility until it meets our safety, performance, and consistency standards.

1. Knife Intake & Condition Check

Each knife is checked for defects, damage, rust, broken tips, or excessive wear. Anything unsafe is pulled from circulation and replaced according to program standards.

2. Angle Verification

Using precision gauges, we confirm that each blade is sharpened to the correct angle for its style and use. Consistency here ensures predictable, safe performance in every kitchen.

3. Edge Testing & Sharpness Check

Blades are tested for burrs, clean edge formation, and smooth cutting. If the edge doesn’t meet our sharpness requirements, it’s corrected immediately.

4. Handle, Heel & Safety Check

We inspect handles for cracks, looseness, or sanitation concerns. The heel, spine, and bolster are checked to ensure no sharp or unsafe edges remain.

5. Final QA & Set Verification

Every knife is verified by set, size, and count to ensure customers receive complete, correct sets with the proper program rotation.
