How We Check Knife Quality Before It Reaches Your Kitchen

Before any knife is loaded onto a route, it goes through a defined AQL (Acceptable Quality Limit) process. Our goal: stop issues in the sharpening center so your team receives sharp, safe, and consistent tools.

Our AQL Process – Step by Step

From sharpening center to your kitchen

Every set follows the same process so quality is predictable, not a guess.

Visual inspection & damage check
Blades are inspected for chips, bends, excessive wear, rust, and handle damage. Any knife that fails this first check is removed or replaced before it moves on.

Edge sharpness & cutting performance
We test the edge for bite and consistency along the full length of the blade. If a knife does not meet our sharpness criteria, it goes back for correction.

Angle, profile & heel check
We verify that the blade profile, edge angle, and heel are correct for the knife type and program. This protects cut quality, safety, and the feel chefs expect from their tools.

Handle & safety review
Handles are checked for cracks, looseness, or other safety concerns. If a handle could compromise grip or safety, the knife is pulled and addressed.

Set accuracy & count verification
Before any case is closed, we confirm the correct mix of knives and the total count for your program. This helps ensure you receive the full set your kitchen relies on.

Final approval & case closure
Once a set passes AQL, it is labeled, closed in its protective case, and cleared for loading. Only then is it ready to be delivered by your Cozzini Driver.
